Irish nachos offer an irresistibly hearty twist on classic loaded nachos, with crispy potatoes being used instead of tortilla chips as the base ingredient. Irish nachos require thinly sliced russet potatoes, which bake up nicely in the oven and have just enough crunch to hold all of your toppings. A light coating of olive oil ensures they crisp beautifully while protecting them from burning in the oven - you may also use other kinds of potatoes such as Yukon gold or red potatoes if preferred.
