Irish Nachos

irish nachos

Irish nachos offer an irresistibly hearty twist on classic loaded nachos, with crispy potatoes being used instead of tortilla chips as the base ingredient. Perfect for St. Patrick's Day parties or game day snacking alike - or anytime when craving satisfying snacks - Irish nachos feature gobs of cheese, salty bacon and fresh chives topped off with flavorful fresh herbs for an irresistibly delicious experience - plus since they can all be baked on one sheet pan, clean-up is effortless!

Irish nachos require thinly sliced russet potatoes, which bake up nicely in the oven and have just enough crunch to hold all of your toppings. A light coating of olive oil ensures they crisp beautifully while protecting them from burning in the oven - you may also use other kinds of potatoes such as Yukon gold or red potatoes if preferred.

Once your potatoes have been baked, spread them out on a baking sheet and top them with shredded cheddar cheese and cooked pieces of bacon. Season the whole thing with salt and pepper before placing it back in your preheated oven to melt the cheese and heat up all together.

Once the cheese has completely melted and bubbly, serve your Irish nachos immediately with a dollop of sour cream and chopped green onions or chives, for an added pop of flavor. A little dollop helps cut through all that rich cheese while tying everything together nicely! For an extra delicious twist use high-quality sharp cheddar that you shredded yourself as this way it melts much better than preshredded types.
